The article considers the possibility of using film-forming compositions based on polyvinyl alcohol to create a modified gas medium inside the fruits of Apple varieties Jonathan and Renet Simirenko. It is shown that the method of storage had a significant effect on the activity of β-fructofuranosidase, which is responsible for hydrolysis of sugars, and also controls the biosynthesis of starch. And by reducing the activity of invertase under the influence of coatings, has helped to keep sugar in greater quantities.

The article discusses the antioxidant capacity of juice-containing drinks - berries drinks. The antioxidant capacity was determinated by the FRAP (ferric reducing antioxidant power) method. Antioxidant capacity of juice-containing drinks depends on the type of berries and semi-finished products, and do not depends on the content of vitamin C. Antioxidant activity of berries drinks decreases when they are stored with an open package.
